Wine – Food pairing for the Holidays?

Can anyone help me with a nice food-wine pairing for the holidays?
I wanted to pour landmark Damaris 2005 and Peju Cabernet Franc 2004
Any help is appreciated.

You’ll want to start with the Chardonnay for the first course – maybe seared scallops either on some salad greens or cooked greens, maybe on some pasta? Lots of butter or a cream sauce. I think of wine pairing in two basic categories – wines that are SIMILAR to the food and wines that are OPPOSITE of the food, and I tend to like similar more, though both ways usually work – obviously, I’m looking at similar when it comes to a rich California Chardonnay.

Cab Franc is usually killer with game. I’ve had it with bison chili and with venison and it’s been great. Lamb is also perfect. A dark rich sauce. Roasted root vegetables. Earthy foods.
