2007 Cabernet Sauvignon – Napa Valley
Made in a French style, the 2007 VELLUM Cabernet Sauvignon is beautiful and elegant with superb balance and perfectly ripened fruit. The wine opens with aromas of boysenberry and spice with hints of sandalwood, nutmeg and cardamom. On the palate Vellum falls broadly with velvety tannins that float mid-palate before enveloping the tongue. The oak is restrained, allowing strong expression of blackberry and black raspberry with background notes of graphite and espresso. More spice comes through on a very long finish.

The Emerson Brown Cabernet is crafted by Keith Emereson, winemaker at Vineyard 29, and Brian Brown, winemaker at Rond Pound. These two friends come together to produce excellent, artisan Napa Valley Cabernet Sauvignon through disciplined winegrowing and winemaking techniques.

The focus on handcrafting excellent Napa Valley Cabernet Sauvignon begins in Brown’s family vineyard, III Michaels Estate which is located on the eastern bench in Oakville. The pedigree of the neighborhood cannot be argued. Within a stone’s throw are notable properties such as PlumpJack, Rudd, Beckstoffer Vineyard George III and Joseph Phelps Backus Vineyard. The opportunity to produce the wine at Vineyard 29, a state-of-the-art, gravity-flow facility in St. Helena, provides an environment where the wine can be handled with utmost care.

Winery Tasting Notes:

Intense color with violet and blue hues suggesting freshness and verve. Explosive aromas of deep black cassis, currant, perfume and dark cocoa. Enters the palate full with an intriguing mineral component and remains round and velvety with structured tannin and acid in harmony with a judicial use of attractive French oak. Persistent black fruit and dark cocoa flavors linger on the palate creating a drawn out, mouth-watering finish. Drink upon release or cellar for up to 15 years.

Wine Tasting 21: 2002 McWilliam Hanwood Estate Cabernet Sauv

Great bargain I bought from the BC Liquor Store!
The McWilliam’s Hanwood estate Cabernet Sauvignon was a bargain! This is another example of an educated buy from my research. What do people habitually buy those artificial ‘Yellow Kangaroo Tail’ which is really Chemical fruit cordial mixed with alcohol like someone with too much superficial make up and no personality! On the nose, full black current cassis, black cherry, mulberry and spicy dark chocolate with much charm face characters but it just doesn’t stop here. While it’s neither overly complex nor deep like an expensive cab (why am I being so judgmental?!), it offer good structure and balance of acid, fruit and soft sweet tannin destined to be another high class quaffer. Friendly, warming and unpretentious, the full body packed full juicy wine delivers much instant gratifications. The finish is fair and leaves good satisfaction. Kudos to the Aussies who make such affordable yet very drinkable wines. Drink now (rating 88-90 points) by Michael Lam of the Beverage Review.

how to describe a cabernet wine with words that will get the customer to buy it?

I am training as a server in a upscale restaurant and I want to sound professional when describing a wine to a customer if the customer asks what do u think about this wine how can i replay?

You will only get yourself in trouble at a real high scale place if you try to BS a real wine person. Otherwise, go with full-bodied, leather, tobacco, stone fruit, and a little oak. If they are clueless they’ll believe you. If they know what you are talking about they’ll call you on it either way.
