Paso Robles has lots of great wineries. It's the fastest growing wine region in California. I'd recommend learning more about the wineries on this website:
http://www.cheers2wine.com/paso-robles-wine-tours.html

I highly recommend McPhees Grill in Templeton as a great place to eat that is not touristry.

My favorite wineries in the Paso area are J. Lohr Winery in Paso Robles and Wild Horse in Templeton. they are both fairly reasonable and very friendly.

As far as non-touristy shops and restaurants, you will not really find much of anything in the Paso robles area. You are goign to have to drive south to San Luis Obispo or over to Cambria if you want a quaint town feel with shops.

Paso Robles is sort of out in the middle of nowhere. And Paso was the town I stopped at burger king on my way to and from SLO and San Francisco in college. Not a whole lot happening there.

I like Castoro Cellars wine (good, not great, wine at a reasonable price), so I would visit them.

For starters, here's a great interactive map of the various wineries in and around Napa. You got lots of places to work with.
http://www.napavintners.com/maps/maps_of_napa_wineries.asp

On a few different notes:
One of my favorite places is Navarro Vineyards. They offer a very nice selections of wine. One item in particular (more of a "specialty item" which is my favorite is their grape juices made from the wine grapes). They are not like your usual Concord super sweet grape juices. These wonderful juices remain non-alcoholic and hints of the various wine grapes they use so they aren't super sweet. They are very refreshing. I'm sure that other wineries produce similar products but I was introduced to Navarro's grape juice first...so I'm a bit partial.

http://www.navarrowine.com/main.php

"V. Sattui" is also another favorite place to stop, wine taste and picnic on their grounds. They have a great shop there where you can buy everything you need from sausages to deli meats to cheeses & crackers once you've selected your favorite wines. I picked up a wonderful dessert wine, "Vin Santo" which was great. It's different in that it's aged in the attic rather than the cellars. I don't know if they still carry it, but you can ask around for Vin Santo.

Have fun!

Apparently older brands such as Korbel and Andre (owned by Gallo) were allowed under the most recent deal to keep the label "American Champagne" when shipped to other regions of the world, but no new products would be able to use the term. However, 3,200 bottles of Andre were destroyed when they went through France on their way to somewhere else because they had the Champagne label on them.

"The US agreed two years ago that its sparkling wines should be called "sparkling wines," but the law grandfathered an exception for some older brands, such as André, that are still allowed to use the word Champagne on their labels. Never mind that these are the wines that bear the least resemblance to the French ideal. The wine's destruction was ballyhooed today by the Office of Champagne USA, established to promote the real deal while protecting its trademark name. Perhaps someone at Gallo, the company that owns and produces André, forgot about the Europeans' sensitivity and shipped some wine with the wrong labels."

There is no US law against it, and it's been common practice. The French, of course, guard their terroir names jealously and will threaten to sue or otherwise make a nuisance of themselves, but the main reason you see fewer American sparkling wines calling themselves "champagne" than in years past is simply that more American wineries feel they should comply in that way (and likely because American "champagnes" in years past were plonk).
